Tasty Tuesday – Scrumptious Autumn-Spiced Pumpkin Bread


Tasty Tuesday is again brought courtesy of Club 31 Women.

I always wanted to be one of those woman who loved to bake and was good at it.  Baking was never one of my strong points and I used to think it was cooking, till my daughter politely told me that only some things were okay.

I wanted to have YUMMY smells floating through the house.  This time of year, it would be pumpkin ANYTHING and then right around the corner are those awesome holiday cookies.  The bakers in the family were always my aunts and my grandmother.  My mom was the cook – she could whip up great meals in no time.

So here is a recipe that I MIGHT try this year… Moist, sweet, and full of all those autumn spices you love. Serve your friends and family by sharing one of the extra loaves of homemade pumpkin bread.Author: Cindy Jensen

Serves: 3 loaves
  • 3 cups pumpkin puree
  • 1½ cups vegetable oil/applesauce
  • 4 cups white sugar
  • 6 eggs
  • 4¾ cup all-purpose flour
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp salt
  • 1½ tsp ground cinnamon
  • 1½ tsp ground nutmeg
  • 1½ tsp ground cloves
  1. Pre-heat oven to 350 degrees. Grease and flour 3-9×5 loaf pans.
  2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs until well-incorporated. In a medium sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually pour into the pumpkin batter a little bit at a time, stirring after each addition until the mixture is well-blended.
  3. Divide batter evenly between the loaf pans and bake for 45-60 minutes, or until a toothpick comes out clean when inserted into the middle.
  4. Allow to cool completely in pans before removing the bread. Run a knife around the edges of the bread in the pan to loosen. Store any remaining bread in plastic wrap.
