Tasty Tuesday – Apple Crumble in a Mug

Apple Crumble in a Mug is brought to you courtesy of Hungry Girl….

My last round of tests are done to determine what and how many food allergies I may have.  I can finally go back to gluten free eating – yes, I do enjoy it.  Over the last week, I have been carefully watching what I eat – portion control and no mindless eating in the hopes of getting back to goal weight.  I came across this recipe and it was easy to convert it to gluten free…

Gooey green apples + sweet cinnamon oats = one crazy-amazing dessert, all for you!

1 1/2 cups peeled and chopped Granny Smith apples (about 2 medium apples)
1/4 tsp. vanilla extract
Dash ground nutmeg
2 tsp. brown sugar (not packed)
1/4 tsp. cinnamon
2 tbsp. old-fashioned oats (gluten free)
1 1/2 tsp. whole-wheat flour (almond flour)
1 tsp. light whipped butter or light buttery spread
Dash salt

Place apple in a large microwave-safe mug sprayed with nonstick spray. Add vanilla extract, nutmeg, 1 tsp. brown sugar, and 1/8 tsp. cinnamon. Stir to coat.

Microwave for 2 minutes.

In a small bowl, combine oats, flour, butter, salt, remaining 1 tsp. brown sugar, and remaining 1/8 tsp. cinnamon. Mash and stir until well mixed and crumbly.

Top apple with oats mixture. Microwave until apple has softened and topping is firm, about 30 seconds.

It was YUMMY and the best part is I can get it all ready and take it to work with me in my Thirty One Go-To Thermal.  Give it a try and let me know what you think…

Remember, I love sharing recipes with others so if you have a favorite you would like to share, send it to me

Have a ThirtyOne-derful day!
