Tasty Tuesday: Beef and Arugula Stir-Fry

Thank you Alene Brennan for today’s recipe.  This is from Terry Wahl’s MS Protocol cookbook but it definitely yummy for everyone!

 

Prep Time: 15 minutes    Cooking Time: 15 minutes     Yields: 4 servings

Ingredients:

  • 1/2 pound beef sirloin, cut into thin strips (organic grass fed is the best)
  • 2 tablespoons of oil (I use Wicked Good Spice Mixes Garlic Oil)
  • 1 tablespoon fresh ginger, minced
  • 1 clove garlic, minced
  • 2 medium red peppers, cut into thick strips
  • 1-2 bunches arugula, well washed
  • 2 teaspoons kuzu (a root – optional)
  • 2 tablespoons tamari (a Japanese sauce)
  • 2 tablespoons rice or cider vinegar
  • 1/4 cup water

Directions:

  1. Stir-fry beef in pan with 2 teaspoons of oil over medium-high heat for 2 minutes or until browned.
  2. Remove beef with tongs or fork, allowing excess oil to drip off and set aside.
  3. With remaining oil, stir-fry ginger and garlic for 2 to 3 minutes and then add bell peppers. Cook another 2 to 3 minutes.
  4. Mix together fresh arugula and bell pepper mixture in a serving bowl.
  5. In a small bowl, combine kuzu, tamari, vinegar and water.
  6. Place mixture into skillet and cook over medium heat until sauce starts to thicken.
  7. Return beef to skillet and cook for 1 minute, just enough to warm up beef.
  8. Add beef to serving bowl with arugula and bell peppers.
  9. Mix and serve warm.

There are always leftovers in our house…..I usually cook for 4 – 6 people despite the fact there are only two of us and then hubby gets meals for work. Tasty Tuesday: Oven Baked Fajita

I found this YUMMY recipe and have tried it.  I cut back on the spices so it wouldn’t be too spicy for hubby BUT it was really good.  Quick and easy.  The bonus is it froze well too.

Thinking it might work with beef too…. OR just lots of veggies.  How will you change it up?

Ingredients:

1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsp vegetable oil (I used olive oil)
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp seasoned salt
1 (15 oz) can diced tomatoes with green chilies (Rotel)
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips

Directions:

  1. Preheat the oven to 400 degrees.
  2. Place chicken strips in a greased 13×9 baking dish.
  3. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
  4. Drizzle the spice mixture over the chicken and stir to coat.
  5. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  6. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender

Tasty Tuesday: 30 Minute Chicken Tortilla Soup

This YUMMy recipe is from MoscatoMom. This delicious and filling Chicken Tortilla Soup is ready in just 30 minutes but tastes like it has been cooking all day! Perfect for cold nights this winter!

Prep Time:  5 mins     Cook Time:  20 mins
Servings: 6

Ingredients

1 cup carrot matchsticks
1 small bell pepper diced
1 cup mild salsa
2 Tbsp olive oil
1 Tbsp Better Than Bouillon – Roasted Chicken Flavor
4 cups water
5 corn tortillas cut in to strips
1 package liquid fajita seasoning
1 rotisserie chicken

Instructions

  1. In a large pot begin by sauteeing carrots and bell pepper in olive oil until soft.
  2. Add in salsa, Better Than Bouillon and water and bring to a boil.
  3. Add in liquid fajita seasoning and allow to boil for 10 minutes.
  4. While that boils, cut tortillas into strips and shred chicken.
  5. Add tortillas to soup and stir until tortillas begin to dissolve.
  6. Add in shredded chicken and let cook for 5 minutes.
  7. Serve hot topped with your favorites – sour cream, avocado, and cheese!

Tasty Tuesday: Pizza-fied Chicken

I don’t know about you but I get tired of chicken!  I love there are “zero” points because I am now eating more protein but it can be boring!  Thank you Hungry Girl for another yummy recipe!

Entire recipe: 272 calories, 8.5g total fat (3.5g sat fat), 633mg sodium, 6g carbs, 1g fiber, 2.5g sugars, 40.5g protein  Freestyle™ SmartPoints® value 2*

Prep: 10 minutes     Cook: 10 minutes   MAKES 1 SERVING

Ingredients

5 oz. raw boneless skinless chicken breast cutlet

Dash each salt and black pepper

1/4 cup canned crushed tomatoes

1/4 tsp. garlic powder

1/4 tsp. onion powder

3 tbsp. shredded part-skim mozzarella cheese

4 slices turkey pepperoni (optional: roughly chopped)

Optional seasonings: additional salt and black pepper

Optional toppings: crushed red pepper, fresh oregano

Directions

  1. Evenly pound chicken to 1/4-inch thickness. Season with salt and pepper.
  2. Bring a skillet sprayed with nonstick spray to medium heat. Cook chicken for 3 – 4 minutes per side, until cooked through.
  3. Meanwhile, to make the sauce, combine these ingredients in a small bowl: crushed tomatoes, garlic powder, and onion powder. If you like, add salt and pepper. Mix well.
  4. While still in the skillet, top chicken with sauce, and sprinkle with cheese. Top with pepperoni.
  5. Cover and cook for 2 minutes, or until sauce is hot and cheese has melted.

Tasty Tuesday: Apple Pie Bites

I don’t like cold weather since I am always cold BUT I do love the Fall.  WHY? Because I can snuggle inside baking and cooking.  I used to do it a lot when Belinda was little BUT I do enjoy it especially for the holidays.   I was going through the recipes trying to decide what to make for Thanksgiving – I get to bring dessert.

I came across this recipe from Blond Cook.  A quick and easy dessert.  I mean who wouldn’t want an awesome dessert in less than 30 minutes.  The best part is it can be made Weight Watcher friendly with just a minor change or two. I am also trying to figure out how to make it gluten free so if you have any suggestions, I would love them!

PREP TIME: 15 minutes.     COOK TIME: 12 minutes.     Serves: 8

Ingredients:

  • 1 (8-ounce) can Pillsbury Original crescent rolls or low fat
  • 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices or fried canned apples
  • 1/4 cup packed light brown sugar
  • 1 teaspoon apple pie spice
  • 3 tablespoon butter, melted
  • 1/2 cup pecans (optional)

Directions:

  • Preheat your oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • In a small bowl, combine brown sugar and apple pie spice. Set aside.
  • Melt butter and toss apple slices in butter.  Set aside.
  • Arrange crescent roll triangles on baking sheet lined with parchment paper.
  • Evenly distribute brown sugar mixture onto each triangle.
  • Sprinkle each triangle evenly with the chopped pecans.
  • Place an apple slice on the wide end of each triangle.
  • Wrap crescent roll dough around each apple.
  • Brush each crescent roll with remaining butter.
  • Sprinkle lightly with additional apple pie spice.
  • Bake for 10-12 minutes,
  • Cool for 5 minutes before serving
