Tasty Tuesday: Bacon Wrapped Pineapple

 

Thank you Wicked Good Spice Mixes for today’s recipe.  Try their pineapple balsamic vinegar to make this easy appetizer.  I love this and the peach vinegar on my salads!

Ingredients:

  • 1 pineapple, cut into bite size pieces
  • 1 lb of thick cut bacon (Look for the nitrite and nitrate free bacon)
  • 1/3 cup of Honey
  • 2 tsp of Wicked Good Spice Mixes Pigs Can Fly
  • 1/4 cup of Wicked Good Spice Mixes Pineapple Balsamic Vinegar

Instruction:

  1. Preheat your oven or grill to 400 degrees
  2. Line a baking sheet with foil for easier cleanup.
  3. Cut up pineapple into bite size pieces and cut each bacon strip in half.
  4. Wrap each piece of pineapple with bacon strip and secure with a tooth pick.
  5. Put honey, Pigs Can fly and Pineapple vinegar in a food processor until blended.
  6. Separate into two bowls. (Put one bowl aside to brush on after bacon wrapped pineapple is cooked.)
  7. Dip a pastry brush in one bowl coat bacon wrapped pineapple.
  8. Bake or grill about 20 minutes until bacon is crispy.
  9. Transfer to a platter and using a clean pastry brush, use reserved bowl of glaze to brush on cooked bacon wrapped pineapple and serve while warm.

Also works well with shrimp or scallops! Yum!

Tasty Tuesday: Crown Shrimp

Another YUMMy recipe from Rachel at Wicked Good Spice Mixes.  This recipe was shared with them by one of their loyal customers at SailFest.  

Ingredients:

1 cup plain yogurt
1 Teaspoon Garlic Explosion
1/4  Teaspoon Pink Himalayan Salt
1 cucumber
1 pound shrimp
olive oil
Directions:
1.  Clean and devein shrimp, remove tails.
2.  Set aside 1/2 cup yogurt
3.  Mix remaining yogurt and seasonings together.
4.  Toss shrimp in the mixture, coating well.
5.  Sautee shrimp in olive oil, 2-3 min per side until pink.
6.  Slice cucumber.
7.  Place one small dollop of yogurt on the center of each cucumber slice.  Place individual shrimp on top of each slice.9.  Serve immediately, and ENJOY!

Saturday Spotlight: TS Magic Chicken Pizza Crust

WOOHOO!! Time to CELEBRATE the weekend…. What says weekend or football more than pizza, right?  I know LOTS of Tastefully Simple consultants and from each one, I learn something.  I got an amazing recipe from Lisa for Magic Chicken which I shared in July.

At a recent vendor event, Tracey Barolomey told me TS had discontinued their gluten free line.  I was surprised because it was AMAZING but as she explained they could not guarantee there was not cross contamination so they decided to discontinue the line.  What was a girl to do for YUMMY gluten free pizza?

Tracey shared with me this recipe using MAGIC CHICKEN as the crust:

Ingredients:

1 pound magic chicken patted dry and shredded (make it even finer by grinding in a food processor.)

8 – 12 ounces shredded mozzarella

2 eggs

2 tbsp Italian Garlic seasoning

2 tbsp parsley

Parmesan cheese to taste.

Directions:

  1. Preheat oven to 400
  2. Parchment line a cookie sheet
  3. Mix all ingredients together in a bowl until combined well.
  4. Press thin and flat into cookie sheet
  5. Back 20-30 min depending on how crispy you like it
  6. Take out, top with your choice of sauce, cheese and toppings, back in oven until cheese melts

I haven’t tried it yet but I am going to.  My biggest problem is I only do a pound of chicken at a time, I need to do LOTS more so I have leftover chicken as prep for other meals.  Tracey recommends if you are freezing this you do it without toppings.

Tasty Tuesday: Stuffed Jalapeño Poppers

I love everything HOT and spicy so I was excited to see this Hungry Girl recipe.

Prep: 25 minutes                 Cook: 30 minutes   Makes 4 servings.

1/4th of recipe (3 poppers with about 2 tbsp. dip): 118 calories, 3.5g total fat (2g sat fat), 385mg sodium, 12g carbs, 2g fiber, 3.5g sugars, 9g protein.  SmartPoints® value 3*

Ingredients

1/2 cup whole-wheat panko breadcrumbs
1 tbsp. grated Parmesan cheese
1 tsp. Italian seasoning
1 tsp. garlic powder
1/3 cup light/low-fat ricotta cheese
1/4 cup shredded part-skim mozzarella cheese
1/8 tsp. each salt and black pepper
12 slices turkey pepperoni, chopped
6 jalapeño peppers, halved lengthwise, seeds and stems removed (see HG Tip)
1/4 cup (about 2 large) egg whites or fat-free liquid egg substitute
1/2 cup canned crushed tomatoes

Directions

  • Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
  • In a wide bowl, combine breadcrumbs, 1 tsp. Parm., 1/4 tsp. Italian seasoning, and 1/4 tsp. garlic powder. Mix well.
  • In a small bowl, combine ricotta cheese, mozzarella cheese, salt, and black pepper. Add 1/4 tsp. Italian seasoning, 1/4 tsp. garlic powder, and remaining 2 tsp. Parm. Mix well. Stir in chopped pepperoni.
  • Evenly spoon and spread mixture into the pepper halves.
  • Place egg whites/substitute in another wide bowl. One at a time, coat pepper halves with egg whites/substitute, shake to remove excess, and coat with breadcrumb mixture.
  • Evenly place on the baking sheet, stuffed sides up. Top with any remaining breadcrumbs.
  • Bake until outside is crispy and pepper halves have softened, 25 – 30 minutes.
  • In a medium microwave-safe bowl, combine tomatoes with remaining 1/2 tsp. Italian seasoning and 1/2 tsp. garlic powder. Mix well.
  • Microwave until hot, about 30 seconds.

Serve poppers with seasoned tomatoes for dipping.

HG Tip: Use a spoon to seed your jalapeños. When handling jalapeños, don’t touch your eyes — pepper juice can STING. And wash your hands well immediately afterward.

Tasty Tuesday Pumpkin Pie Chessecake Dip

Just a few more days and it will be Thanksgiving.  Last year, we were planning on a house full of kids and heading to New York for the Macy’s Thanksgiving Day parade.  This year will be much quieter.

I’m LOVE pumpkin everything! I wanted to share this recipe that I found made with International Delight Pumpkin Spice Creamer.  I’m going to  make this as an added treat on Thanksgiving.  They said it was an appetizer but it definitely sounds like it would fit in the dessert category.  What do you think?

Prep time: 10 mins.     Total time: 10 mins

Ingredients

¾ cup International Delight Pumpkin Pie Spice Creamer
1 3.4 oz package pumpkin spice instant pudding
1 8oz package cream cheese, softened
¼ cup granulated sugar
2 cups frozen whipped topping, thawed
Graham cracker crumbs for garnish

Instructions
In a bowl, whisk together the International Delight Pumpkin Pie Spice Creamer with pumpkin spice instant pudding. Set aside for about 5 minutes.
In a mixing bowl, beat together the softened cream cheese and sugar.
Add in pudding to cream cheese mixture and beat.
Once well combined, fold in the 2 cups of thawed whipped topping and refrigerate.
When ready to serve, fill bowl with Pumpkin Pie Cheesecake Dip topped with graham cracker crumbs.

Notes:  If you can’t find pumpkin spice instant pudding (it is seasonal), you can use either vanilla or cheesecake instant pudding with a teaspoon of pumpkin pie spice.

You can serve this dip along side graham crackers or fruit, but I heard that if you serve it with Biscoff cookies (you know, the cookie butter cookies), the taste is out of this world! Serious pumpkin pie taste in each bite!
