Tasty Tuesday: Lemon Bread

 

 

Thank you Kathy Stine of Paparazzi for today’s recipe.  This sounds yummy as a light dessert or to have with a hot cup of tea for a snack.   The recipe makes one loaf!

 

Ingredients:

  • 1 large lemon
  • 1 ½ cup flour
  • 1 tsp. Baking powder
  • ¾ tsp. Salt
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • ½ cup nuts (optional)

Directions:

  1. Mix and set aside equal parts from juice of lemon and sugar.
  2. Grate just the yellow of the lemon peel,
  3. Add to flour, sugar, soda and mix well.
  4. Now add oil, milk, eggs and mix.
  5. Put into a greased loaf pan.
  6. Bake at 350 for 45-50 minutes or until tooth pick inserted into center comes out clean.
  7. Turn out onto a cooling rack.
  8. Poke loaf all over the top with a skewer and brush with the lemon mixture while hot.
  9. Do this in layers (brush all over top & sides, let set a few seconds and repeat until mixture is gone)
  10. Cool & enjoy

Tasty Tuesday: Apple Pie Fritter Bread

Today’s recipe is courtesy of The Baking Chocola Tess.

Do you like Apple Fritters?  I don’t mean the kind you find in WaWa or any other store bakery.  Have you ever had an apple fritter baked into a fluffy, buttery, white cake loaf with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top?  I mean the moist, delicious and full of home-made goodness from the heart – just like home kind!  I am going to tweak this some so it is gluten free and hopefully it will be just as YUMMY!

Bread Loaf

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup butter, softened

2 eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk or almond milk

2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

Old-Fashioned Creme Glaze

1/2 cup of powdered sugar

1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Instructions
  1. Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  2. Mix brown sugar and cinnamon together in a bowl. Set aside.
  3. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
  4. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
  5. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
  6. Mix milk into batter until smooth.
  7. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.
  8. Lightly pat apple mixture into batter.
  9. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
  10. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
  11. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
  12. To make glaze, mix powdered sugar and milk or cream together until well mixed.
  13. Let cool for about 15 minutes before drizzling with glaze.

Tasty Tuesday – French Toast in a Mug

I know, you are wondering “why would I make french toast it a mug when I will have a house full of people”, right?  The truth is this is a great way to watch what you eat and still enjoy the yumminess everyone else is enjoying.

My daughter is celiac so we need to be VERY careful about crossing over anything gluten.  This is a great alternative for her to be able to enjoy french toast without the fear of gluten.

Entire recipe: 145 calories, 1.5g total fat (0g sat fat), 482mg sodium, 21g carbs, 5.5g fiber, 2.5g sugars, 12g protein.  SmartPoints® value 2*

Prep: 5 minutes                   Cook: 5 minutes or less

Ingredients:

1/4 cup (about 2 large) egg whites or fat-free liquid egg substitute
2 tbsp. unsweetened vanilla almond milk
1 no-calorie sweetener packet (like Truvia)
3/4 tsp. maple extract
1/2 tsp. cinnamon
Dash salt
2 slices light bread (we are going to use gluten free)

Optional toppings: lite pancake syrup, powdered sugar, berries

Directions:

  • Spray a microwave-safe mug with nonstick spray. Add all ingredients except bread. Mix thoroughly.
  • Cut bread into 1-inch pieces.
  • Add bread pieces to the mug, and gently stir to coat. Microwave for 1 minute.
  • Gently stir. Microwave for 45 seconds, or until set.
