Tasty Tuesday: Simple Keto Broccoli Crustless Quiche

This simple and delicious Keto Crustless Quiche will be your new keto breakfast favorite! Perfect for meal prep for breakfast on the go! I love the fact it is gluten free too!!!

Ingredients

9 eggs
2 cups shredded cheddar cheese
1 1/2 cups broccoli florets – steamed and roughly chopped
2/3 cup heavy whipping cream
1 tsp salt
1 tsp pepper

Instructions

  1. In a large bowl, crack eggs and stir briskly.
  2. Slowly pour in heavy whipping cream and mix thoroughly.
  3. Add in cheese, broccoli, and seasonings and stir until well combined.
  4. Pour into greased muffin tin or baking dish.
  5. Bake at 350* until cooked through and top begins to brown – approx 15 minutes in a muffin tin and 45 minutes in a baking dish.
  6. Serve warm or room temperature.

Note* quiche will rise when baking but will settle as it cools. To save, seal tightly in the refrigerator.

Tasty Tuesday: Apple Pie Fritter Bread

Today’s recipe is courtesy of The Baking Chocola Tess.

Do you like Apple Fritters?  I don’t mean the kind you find in WaWa or any other store bakery.  Have you ever had an apple fritter baked into a fluffy, buttery, white cake loaf with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top?  I mean the moist, delicious and full of home-made goodness from the heart – just like home kind!  I am going to tweak this some so it is gluten free and hopefully it will be just as YUMMY!

Bread Loaf

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup butter, softened

2 eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk or almond milk

2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

Old-Fashioned Creme Glaze

1/2 cup of powdered sugar

1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Instructions
  1. Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  2. Mix brown sugar and cinnamon together in a bowl. Set aside.
  3. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
  4. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
  5. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
  6. Mix milk into batter until smooth.
  7. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.
  8. Lightly pat apple mixture into batter.
  9. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
  10. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
  11. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
  12. To make glaze, mix powdered sugar and milk or cream together until well mixed.
  13. Let cool for about 15 minutes before drizzling with glaze.

Tasty Thursday: Egg Rolls for Breakfast! 

I know it is Thursday but since it was a holiday, I decided to change things up a bit.  This is another YUMMY Hungry Girl recipe.  Do you want to be the talk of your potluck brunch? Show up with a platter of these egg-scramble egg rolls, and you’ll achieve legendary status. Of course, they’re also excellent for weekday mornings at home…

Prep: 15 minutes   Cook: 40 minutes     MAKES 3 SERVINGS

1/3rd of recipe (2 egg rolls): 290 calories, 8g total fat (4g sat fat), 833mg sodium, 34g carbs, 2g fiber, 3.5g sugars, 19.5g protein.  SmartPoints® value 8*

Ingredients:

2 frozen meatless or turkey sausage patties with 80 calories or less (like the kind by MorningStar Farms or Jimmy Dean)
1/3 cup chopped bell pepper
1/3 cup chopped onion
1 cup (about 8 large) egg whites or fat-free liquid egg substitute
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. each salt and black pepper
1/3 cup light/reduced-fat cream cheese
6 large square egg roll wrappers (stocked with the refrigerated Asian items in the supermarket)
Optional dips: salsa, ketchup

Directions:

  • Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
  • Cook sausage in a large skillet sprayed with nonstick spray. (Refer to package for temp and cook time.) Transfer to a cutting board.
  • Clean skillet, if needed. Re-spray, and bring to medium-high heat. Add bell pepper and onion. Cook and stir until slightly softened, about 4 minutes.
  • Reduce heat to medium. Add egg whites/substitute and seasonings. Cook and scramble until veggies are soft and eggs are fully cooked, about 3 minutes.
  • Transfer egg scramble to a medium-large bowl.
  • Chop or crumble sausage. Fold sausage and cream cheese into egg scramble.
  • Lay an egg roll wrapper flat on a dry surface. Evenly distribute about 1/6th of the egg scramble (about 1/3 cup) in a row a little below the center.
  • Moisten all four edges by dabbing your fingers in water and going over the edges smoothly. Fold the sides about 3/4 inch toward the middle, to keep filling from falling out. Roll up the wrapper around the mixture and continue to the top. Seal with a dab of water.
  • Place on the baking sheet, and repeat to make 5 more egg rolls.
  • Spray with nonstick spray. Bake until golden brown, 23 – 25 minutes.

HG Tips: Make these in advance, and reheat in the toaster oven for 3 – 5 minutes. They’re also oddly delicious straight out of the fridge!

How about a Football Wives party?

I am football fanatic but what a great way to pass the time for those who are not into football (or hockey).  I told my hubby just the other day, he got me hooked on football and now I am the one yelling at the TV during football games.  We have some NEW Fall prints which will give you a chance to shop for the men in your life so they can sport their favorite team’s colors.4347bad3acf34b429d415c4837ef2de4

Chocolate Lovers Party – Serve chocolate goodies. Guests bring their favorite chocolate bar.  We play a chocolate game and the winner takes home ALL of the chocolate bars.  I mean who doesn’t love chocolate…

Fundraiser Party – October is Breast Cancer Awareness and Domestic Violence Awareness Month. Why not support your favorite cause at the same time guests are doing their shopping? I will donate 25% of all sales to your organization or cause.  Encourage guests to bring their gently used bags to be donated to a local shelter and I will give them a discount on their new purchase. Challenge your guests to come in costume and earn a gift.  Trick or Treat bags from me.  Serve apple cider,pumpkin pie or candy apples.images

Brunch – Nights too busy?  Busy moms would love a moment in between dropping the kids off and the next errand to grab a bagel or donuts, and a fresh cup of coffee or tea. This is can be done as an Open House but for a shorter period of time. It solves so many concerns – no time, what to serve & keep things short and sweet. A great way to spend a Saturday or Sunday morning or that week day morning when the kids are at school.

Men’s Only Party – Invite the men for an afternoon of football, pizza, soda (or beer) and Thirty-One.  Set up a display and let them shop for Christmas presents during halftime, tell them that when they place a $35 (or whatever) order, I’ll wrap the gift for them.  I will help you gather a wish list from your friends (their wives/girlfriends) to make the shopping easy.

My calendar is almost full for October but I am always looking for new party ideas.  I LOVE themed home parties.  It makes things easy for the hostess and I am able to help her keep things simple.  Many of my guests get into a theme party to varying degrees and the time of year.
