Tasty Tuesday – Fudge Brownies

Today’s recipe is courtesy of Hungry Girl. The actual name of the brownie is “secret-ingredient” fudge brownie BUT I figured you would’t check it out if you knew there was a secret ingredient. LOL.  I’m trying to get back on track but I do love my sweets.  I never remember craving them this much but lately it has been really bad!  The best part about this recipe is I can make it gluten free with almond flour.

NUTRITION FACTS:  1/9th of pan (1 brownie): 107 calories, 2g total fat (1g sat fat), 190mg sodium, 23g carbs, 5.5g fiber, 4g sugars, 5.5g protein

Prep: 10 minutes     Cook: 30 minutes    Cool: 1 hour

Ingredients:

  • One 15-oz. can cannellini (white kidney) beans, drained and rinsed
  • 2/3 cup unsweetened cocoa powder
  • 1/3 cup unsweetened applesauce
  • 1/4 cup canned pure pumpkin
  • 1/4 cup (about 2 large) egg whites or fat-free liquid egg substitute
  • 1/4 cup whole-wheat flour
  • 1/4 cup Truvia spoonable no-calorie sweetener (or another natural brand that’s about twice as sweet as sugar)
  • 1 tsp. vanilla extract
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 3 tbsp. mini semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees. Spray an 8” X 8” baking pan with nonstick spray.
  2. Place all ingredients except chocolate chips in a food processor. Puree until completely smooth and uniform.
  3. Fold in 1 tbsp. chocolate chips. Spread mixture into the baking pan, and smooth out the top.
  4. Evenly top with remaining 2 tbsp. chocolate chips, and lightly press into the batter.
  5. Bake until a toothpick (or knife) inserted into the center comes out mostly clean, 25 – 30 minutes.
  6. Let cool completely, about 1 hour.

Tasty Tuesday: Cinnamon Muffin Recipe

Thank you to “The Staten Island Family” for today’s recipe.  These yummy muffins are only TWO points on the Weight Watchers (WW) program.  You are definitely going to want to give them a try.  I’m still working on a gluten free version.  I need to find a Kodiak-like mix which is gluten free.  If anyone knows of one, please let me know!

Despite the newest health struggle and the restriction AGAIN to more things, I am trying to stick with my points.  My goal is to get back to Weight Watchers soon (maybe by mid-June).

Ingredients

  • 2 cups Kodiak Cakes Power Cakes Protein packed whole grain buttermilk flapjack and waffle mix 19 Points
  • 14 tsp table salt 0 Points
  • 12 tsp baking powder 0 Points
  • 2 tsp ground cinnamon 0 Points
  • 1 cup Sugar-free syrup, maple flavor Point
  • 3 eggs 0 Points
  • 1 cup plain unsweetened almond milk 1 Points
  • 1 tsp vanilla extract 0 Points
  • 5 sprays Cooking spray 0 Points

Directions 

  1. Preheat oven to 350 
  2. In a large bowl, mix together all the ingredients.
  3. Spray muffin tin with cooking spray.
  4. Pour batter evenly into the 12 muffin cup tins
  5. Bake for 17 minutes.

Once they are all done, you can freeze them individually for a quick easy on the go breakfast.  Just take them out the night before OR zap them in the microwave to warm them up.  You can drop one in ThirtyOne’s Cool Zip Snacker and take with you as you head out the drop.  These are food safe and reusable.  This cute thermal pouch  has a zipper top and adorable critter design! Tasty Tuesday: Pink Flamingo Cake

This YUMMY recipe came across my Facebook page some time ago.  When the NEW Flamingo prints with Thirty One arrived this Spring (yes, it is Spring at Thirty One), it seemed the perfect time to share it…

If the name didn’t hook you, the hot pink, amazing-tasting cake itself will. But really, pink flamingo cake, how could anyone resist it??  This fun, fruity feast looks great and tastes even better! It gets the majority of its flavor and color from cherries, both maraschino cherries and cherry jello, with a touch of pineapple in the frosting to round out the overall flavor and bring a little more brightness to the dish.

Think of the fun everyone will have when they cut into the cake, thinking it will be an average vanilla or chocolate, BUT find a bright PINK interior.  This is a nice, simple recipe anyone can tackle – even the kids!  Flamingo cake could become one of YOUR summer go-tos.

Cook Time: 1 hour 20 minutes to prepare     Serves: 12-16

INGREDIENTS

Cake:
1 (15.25 oz.) package white cake mix
1 (3.5 oz.) cherry jello mix
3/4 cup vegetable oil
3/4 cup buttermilk
3 large eggs
1 teaspoon vanilla extract
Frosting:
1 (8 oz.) can crushed pineapple
1 (3.4 oz.) package instant vanilla pudding mix
1 (16 oz.) container frozen whipped topping, thawed
1 (8 oz.) jar maraschino cherries, halved, juices reserved

Directions:

  1. Preheat oven to 350º F and lightly grease a 9×13-inch baking dish.
  2. In a large bowl or mixer, beat cherry jello mix, vegetable oil, buttermilk, eggs and vanilla extract into white cake mix until just combined, then pour into greased baking dish.
  3. Place baking dish in oven and bake for 30-35 minutes, or until toothpick inserted in center comes out mostly clean.
  4. Remove from oven and let cool.
  5. Place crushed pineapple, with juices, and halved cherries in a large bowl and sprinkle pudding mix on top.
  6. Fold in frozen whipped topping and 1/4 cup cherry juice until smooth and combined, adding more cherry juice, if desired.
  7. Frost (cooled) cake and refrigerate for 2-3 hours, or until set.
