Tasty Tuesday – 3 Ingredient Apple Cake

TODAY is the day!  Belinda and Ashley are arriving in Phillie this morning.  I am on my way to the airport to pick them up.  So excited to have them home for Christmas.  It seems like forever since the wedding in August.

Ingredients

1 box Duncan Hines® Signature Spice Cake Mix
3 large eggs (beaten)
1 can Duncan Hines Comstock® Country Apple

Baking Instructions

In a large bowl, combine dry cake mix, eggs and pie filling.
Stir together until well mixed.
Bake in greased Bundt pan, 350 degrees for 35 minutes or test with toothpick for doneness.

I haven’t tried this but it sounds yummy!  I have to admit that I have horrible memories of using bundt pans in the past.  I am sure they are more advanced now!  I always made a mess!  LOL.

This is one of those cakes that can be used as a dessert or for brunch.  A perfect thing to have on hand when unexpected company drops by this holiday season.  How about serving it warm with some ice cream?

Tasty Tuesday -Sweet Spicy Appy

I LOVE this recipe and every time I make it, everyone raves about it.  The only difference is that I use frozen “turkey meatballs” instead of sausage.  Thank you Jenny Bullistron

Ingredients

• 1 teaspoon extra virgin olive oil
• ½ tablespoon minced garlic
• 12 ounces chili sauce
• 12 ounces grape jelly
• ½ tablespoon crushed red pepper
• ½ teaspoon cayenne pepper
• 32 ounces fully-cooked sausage, cut into ½-inch piece

Instructions
Pour the oil in a small saucepan and heat over medium heat. When the oil is hot, add the garlic and saute for 30 seconds. Then add the chili sauce and grape jelly and mix together. Cook for 10 minutes on medium heat, stirring frequently.
Place the sausage in your slow cooker. Add the spices to the sauce mixture, stir and then pour it over the sausage. Cover and cook for 1½ – 2 hours or until the sausage is hot and the sauce is bubbly. Stir once after 1 hour.

NOTE:  I throw everything into the crock pot – less mess, less to clean up!!

Tasty Tuesday – Sweet Potato Bundt Cake with Marmalade Ribbon

Today’s Tasty Tuesday is courtesy of LouisianaCooking.com who shared this recipe by By Cindy Nerat of Menominee, Michigan.  I have lots of people who tell me that they don’t like sweet potatoes but I am sure that this will convince them how YUMMY they really are.

Ingredients

1 (8-ounce) package cream cheese, softened
¼ cup sugar
¾ cup orange marmalade, divided
3 large eggs, divided
1 (16-ounce) can candied yams, drained, syrup reserved
¼ cup vegetable oil
1 (15.25-ounce) box yellow cake mix* (They used Betty Crocker Super Moist Yellow Cake Mix)
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1½ cups confectioners’ sugar

Directions:

Preheat oven to 350°. Spray a 12-cup Bundt pan with baking spray.
In a medium bowl, beat cream cheese and sugar with a mixer at medium speed until fluffy, 3 to 4 minutes. Add ½ cup marmalade and 1 egg, and beat until combined. Set aside.
In a large bowl, mash yams until smooth. Add oil, cake mix, cinnamon, cloves, nutmeg, ½ cup reserved syrup, and remaining 2 eggs; beat with a mixer at medium speed for 2 minutes. Place half of the cake batter in prepared pan, spreading it evenly. Spoon marmelade filling on top, staying away from the edges of pan. Spoon remaining cake batter over marmelade.

Bake until a wooden pick inserted near center comes out clean, 45 to 50 minutes. Let cake cool in pan for 30 minutes before inverting onto a cake plate. Let cool completely.
In a small bowl, microwave butter until melted. Stir in vanilla, remaining ¼ cup marmalade, and confectioners’ sugar. Stir in 3 teaspoons of reserved syrup. Spread glaze over cake.

Who’s Ready for Football?

As you can guess by the title – I am excited about football season starting.  Alright, I was never really a football fan until Rob and I got together.  I tolerated the Sunday ritual in the beginning by finding things to keep me busy while the game was on. Then one day a light bulb went off – that AHA moment when I realized, why not just enjoy the time together.  So now we watch football together – I am a little more vocal than he is but it is fun times except when our teams are playing against each other.  He is a die-hard Giants fan.  I am a JETS fan.  No heckling allowed!
