
- 1/4 cup Wicked Good Basil Olive Oil
- 2 medium eggplants, unpeeled, cut into 1/2-inch cubes
- 1 large Vadalia onion, diced
- 2-3 tbs. of GARLIC EXPLOSION
- 2 – 3 tbs Tuscan Bistro
- 1/2 cup sun dried tomatoes diced
- 2 cups plum tomatoes, diced
- 3 tablespoons BALSAMIC VINEGAR
- 3 tsp drained capers
- 6 – 8 fresh chopped basil
- 1 can tomato paste
- 1 cup olives (mixed and pitted)
- 2 stalks celery, diced
- 2 tbsp sugar
- 1/2 cup of water
- Salt and pepper to taste
DIRECTIONS:
- Heat oil in heavy large pot over medium heat.
- Add eggplant, onion, and garlic explosion, sauté until eggplant is soft and brown, about 15 minutes.
- Add diced tomatoes with juice, then red wine vinegar and drained capers.
- Cover and simmer until eggplant and onion are very tender, stirring occasionally, about 12 minutes.
- Season caponata to taste with salt and pepper.
- Mix in fresh basil.
- Transfer caponata to serving bowl.
- Serve warm, at room temperature, or cold. (Caponata can be made 2 days ahead. Cover and chill.)
