Tasty Tuesday: Sweet Potato &Turkey Frittata

As you know we have health struggles in our house and one of our goals is to battle them in a holistic manner.  So we stumbled onto Vani Hari and were immediately hooked.

This can be used for brunch but I actually like it for dinner with a salad or some fresh veggies roasted in the oven.  Sweet potatoes are one of my favorite veggies and they are full of beta carotene – a potent antioxidant for fighting aging – along with lutein which make them fantastic for your eyes and vision. We are blessed to get fresh eggs from a family member so I know they are organic eggs.  I swear they taste better too! Eggs are a good source of protein, omega 3 fatty acids, and vitamin D & B12.

Prep time:  5 mins     Cook time: 20 mins     Total time:  25 mins     WW SmartPoints: 11 Serves: 2-3


2 tablespoons coconut oil, divided
4 ounces ground turkey (vegetarian: use 1 cup chopped kale)
1 sweet potato, peeled and small dice
5 eggs, beaten
1 teaspoon chili powder
¼ teaspoon sea salt, more to taste
⅛ teaspoon ground pepper, more to taste
2 tablespoons chopped parsley


  • Heat the oven to 400 degrees.
  • Heat 1 tablespoon of oil in a saute pan over medium heat. Add the turkey and cook until no longer pink. Add the sweet potato and cook until tender, adding water to the pan if needed.
  • Pour the sweet potato mix in an oven safe dish. In a separate bowl, beat the eggs with the chili powder, salt and pepper. Add to the sweet potato mix and place in the oven.
  • Bake for roughly 15-20 minutes or until the eggs are set. To serve, place a slice of the frittata on your plate and top with some chopped parsley. Enjoy!

For me, I am looking forward to the New Year with anticipation of all God has in store for me.  Leaving my part-time job.  Trusting and having faith God will provide for our needs (without the use of credit cards).  Excited. Scared, Nervous.  #changeisintheair….

Let’s Get Unstuck Together!

88353WOOHOO!  It is Wednesday – the last day of the month and a day we are going to CELEBRATE you!


How many of you woke up this morning, and hit the snooze button?  How many of you buried your head under the covers for just a few minutes more?

I will admit, that is me most mornings.  I could use the excuse of health challenges but that isn’t always the case – sometimes, I just don’t want to get up.  Have you been there?

What happens if you just push yourself to move – put those feel and on the floor? The simple key to moving forward (or getting up) is ……….

“The key is to get your feet on the ground and keep them moving!”

Simple, but so true.

In that split second when you decide to sit up, swing your legs over the side of the bed, stand up and start moving – something happens.  You have made the conscious decision to say, “No. I’m getting up now,” and then followed through with action steps.  Once I start moving, I keep moving!   There is no turning back.  There is a sense of accomplishment!  What about you, do you feel that little tingle of pride. “You did it! You didn’t feel like it, but you got moving.”

Success is a series of good decisions.  When you stack them up one on top of another;  you build a wonderfully successful life. I know, getting out of bed doesn’t seem so major, right?  But the actions that you took to do that can be applied to other areas of your life.  One small step at a time….

It starts with getting up early so you can meditate or work out.  Then it moves to choosing the grilled fish off the menu instead of fried (eating healthy). When you approach a big decision that needs to be made – break it up into small decisions.  It can start with saying “no” to an opportunity that will lead you away from your vision rather than closer to it.

So what keeps you procrastinating? Will you head to the gym or come up with an excuse? Will you sit down and work on that project or turn on the television?

  1. The person that you’ve been procrastinating about reaching out to – when you finish reading this, contact them immediately. Don’t wait until later. Do it now – while your motivation is high. 
  2. That thing you need to say, but can’t seem to muster the courage? Remember this: All you need to do is open your mouth and say it – honestly and kindly. That’s all that is standing between you and standing in truth.
  3. Ask for help from someone who is a “mover.” Sometimes we just need to get around somebody with vision, someone on the move. High energy is contagious.
  4. Stop thinking about your problem and think about a solution. Ask, “What’s the next easiest step that will move me towards what I want?”

Feeling stuck and being stuck are not the same. Feelings are honest, but they are not necessarily the truth. Feelings come from thoughts – what you say to yourself about your dilemma. Change your thoughts and you change what you feel. Change what you feel and you change what you do.

Staying stuck is a choice. Move towards what you want. Even if it is a baby step, get moving!

Unclutter Your Life

Take The Stress Out Of Dinner

Another key is having a back-up go-to family fave that you always have the ingredients for. In our house, it is tuna noodle casserole. I always have all of the ingredients on hand. Pretty healthy since I use almond milk and low fat cheese, super quick, go to meal and hubby loves it frozen for more dinners.  Every household needs one – what would it be in your household?

Be sure to plan the side dishes as well. Vegetables should take up half the space on your plate. Choose fresh salads, steamed, stir-fried or roasted veggies. Stock up with frozen veggies for days you are short on the fresh stuff — they are still packed with nutrients. Our favorite alternative to the rice is quinoa.

Make A Solid List

Are you thinking, “I don’t have time to meal plan”.  Believe me, I totally get it. Life is crazy busy. The truth is isn’t  5-10 minutes a week worth it when you are less stressed.  Yes, you will be less stressed!  Work on your list when watching TV, or messing around with your phone. Once the list is done, do your list and plan when you are going to the grocery store.

Keep the recipes in front of you when you are making your shopping list. Check the fridge, freezer or pantry to really make sure you have every item, and enough of every item you’ll need for the week. I have a wipe board on the fridge so that either hubby or I can add things as we run out or open the last one on the shelf.  For the tech savvy, try keeping a running grocery list on your phone or use the ShopShop app.

When it comes to grocery shopping try to limit your trip to one or two stores. I know all the bargain hunters and couponers out there are tossing daggars at me, but for me, it doesn’t make sense to spend time and gas running from store to store for some savings.  Don’t get me wrong, I do compare prices between my usual 2 or 3 places. Remember that your time has value too. You will be surprised how much money you save just by having a solid grocery list (and sticking to it).

Alright, so meal planning may not change your life but it will help you feel more in control of your hectic weeks. An added perk is to actually have an answer when the kids ask you “what’s for dinner!?”

Healthy No-Bake Oatmeal Raisin Cookie Bites

Today, I am back on the road…. heading home from what can only be described as the BEST National Conference ever!!!  I know you are probably tired of me in your new feed BUT I am so excited about all of the things coming up this season with Thirty One.

I came across this “healthy” no bake version of my favorite cookie and I wanted to share it….How to make healthy no-bake oat meal cookie bites by LaurenConrad.com


¾ cup oat flour (you can buy oat flour or make your own by grinding oats in a food processor)
1 scoop vegan vanilla protein powder
a pinch of Himalayan pink salt or sea salt
½ tsp cinnamon
1 Tbsp. coconut palm sugar
2 Tbsps. almond butter
2 Tbsps. raisins
¼ to ½ cup almond milk


  1. Combine oat flour, protein powder, salt, cinnamon, coconut sugar, and raisins in a medium mixing bowl and stir to combine.
  2. Mix almond butter into dry ingredients.
  3. Add ¼ cup almond milk and stir until a thick dough is formed, adding more milk if needed.
  4. Refrigerate dough for at least 30 minutes. Remove from the refrigerator and form into truffle-sized balls, rolling in a little bit more oat flour if the dough is still sticky.

Enjoy immediately or refrigerate for later.
