Tasty Tuesday: Chicken Cabbage Stir-Fry

20953301_1451132834934122_1833240564025144783_n.jpgI wish I could remember where I saw or got this recipe from so I could give them credit!  It is so YUMMY!  I’m wondering how it would work in the crock pot, so I might just give it a try.  We have an insta pot too but I have never used it.  Is this a recipe you could do in it?  What do you think?

Ingredients:

3 chicken breast halves
1 teaspoon vegetable oil
3 cups green cabbage, shredded
1 tablespoon cornstarch
1⁄2 teaspoon ground ginger
1⁄4 teaspoon garlic powder
1⁄2 cup water
1 tablespoon Soy sauce, low sodium (I use gluten free)

Directions:

1. Cut chicken breasts into strips.
2. Heat oil in a frying pan.
3. Add chicken strips and stir fry over medium-high heat, turning constantly until done.
4. Add cabbage and sauté 2 minutes until cabbage is crisp-tender.
5. Mix cornstarch and seasonings; add water and soy sauce, and mix until smooth.
6. Stir sauce into chicken/cabbage mixture.
7. Cook until sauce has thickened and chicken is coated, about 1 minute.
8. Refrigerate leftovers within 2 hours.

Notes:
• Add bell peppers or carrots for color.
• Try with broccoli.

Got leftovers?  We always do since I can’t seem to get the hang of cooking for just two people.  You would think I was from a BIG family.  LOL.

Tasty Tuesday – Spaghetti Squash Boats

delish-taco-spaghetti-squash-still002-1527256416.jpgIt’s SUPER easy to make this recipe vegetarian. Simply sub out the beef for extra veggies! Bell peppers, spinach, and red onions would all be great additions.

Prep Time:  15 MINS     Total Time:  1 HOUR 10 MINS     Makes: 4 servings

INGREDIENTS  FOR SPAGHETTI SQUASH

2 medium spaghetti squash, halved, seeds removed
1 tbsp. extra-virgin olive oil
Kosher salt
1/2 tsp. chili powder
1/2 tsp. cumin

INGREDIENTS FOR FILLING

1 tbsp. extra-virgin olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 lb. ground beef
1 tbsp. taco seasoning mix
Kosher salt
Freshly ground black pepper
1 (15-oz.) can black beans
1 1/2 c. chopped cherry tomatoes
1 c. corn, canned and drained or frozen
1 c. shredded Monterey jack
1/2 c. shredded cheddar
2 tbsp. freshly chopped cilantro (optional)

DIRECTIONS

  1. Preheat oven to 400°. Drizzle cut sides of spaghetti squash with oil and season with salt, chili powder, and cumin. Place cut side down on a large, rimmed baking sheet. Roast until tender, 30 to 35 minutes. Let cool slightly. Using a fork, break up squash strands.
  2. Meanwhile, make filling: In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more.
  3. Add ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain fat.
  4. Stir in taco seasoning, then season to taste with salt and pepper. Stir in black beans, cherry tomatoes, and corn.
  5. Fill each spaghetti squash with beef mixture and top with cheeses. Return to oven to melt cheese, 5 minutes. Garnish with cilantro and serve.

Tasty Tuesday – Simple Keto Pizza Chicken Bake

No…. I’m not on the Keto  diet BUT this looked yummy.  I am always curious how these recipes will translate to Weight Watchers’ Smart Point…Thank you Moscato Mom for today’s recipe.
This simple and delicious Keto Pizza Bake will win over your pizza loving family!
Prep Time:  10 mins     Cook Time:  30 mins
Total Time:  40 mins     Servings:
Weight Watchers Smart Points: 4
Ingredients
  • 3 Large boneless skinless chicken breasts
  • 2 tsp. Garlic powder
  • 1 tsp. Basil
  • Salt and pepper to taste
  • 1 tbsp. Olive oil
  • 12 tbsp. Low carb Marinara sauce
  • 1 c. Mozzarella cheese (for WW use part skim cheese)
  • 24 Pepperoni slices

Instructions

  1. Preheat the oven to 400 degrees.
  2. Slice the three chicken breasts in half lengthwise to create 6 pieces of chicken.
  3. Sprinkle 2 teaspoon of garlic powder evenly over both sides of the chicken breasts.
  4. Add ½ teaspoon of basil to each side of the chicken breasts.
  5. Apply salt and pepper to taste to each side of the chicken.
  6. Heat 1 tablespoon of oil in a skillet over medium-high heat. Once the skillet has come to temperature, add the chicken breasts. Sear them for 1-2 minutes on each side without moving, so that they get some good color.
  7. Place the chicken breasts in a single layer in a casserole dish or other baking pan with high sides.
  8. Cover each piece of chicken breast with two tablespoons of a low carb marinara sauce. You can substitute this with any other low carb pasta or pizza sauce of your choosing, just make sure that sugar is not in the ingredients.
  9. Sprinkle 1 cup of mozzarella cheese over top of the chicken breasts.
  10. Top each chicken breast with four slices of pepperoni.
  11. Bake the chicken for 30-40 minutes or until the toppings have browned, and the chicken is cooked through.

Tasty Tuesday: Egg Roll in a Bowl

This YUMMY recipe is from Weight Watchers.

Prep Time: 10     Cooking Time: 20     SmartPoints™ value: 1     Servings: 8

Ingredients

1 pound(s) cooked 99% fat-free ground turkey breast
1 pound(s) packaged coleslaw mix (shredded cabbage and carrots)
½ medium uncooked onion(s), thinly sliced
1 Tbsp sesame oil
¼ cup(s) soy sauce
2 medium clove(s) garlic clove(s), minced
1 tsp ground ginger
2 Tbsp fat free chicken broth
1 pinch table salt, to taste
1 pinch black pepper, to taste
2 medium uncooked scallion(s), sliced
8 oz canned bamboo shoots, 1 can sliced bamboo shoots
8 oz canned water chestnut(s), 1 can sliced water chestnuts
14 oz baby corn ears, canned, cut each in halves or thirds

Instructions

1. Brown turkey over medium heat.
2. Add sesame oil and onion to pan with turkey. Mix together and continue cooking over medium heat.
3. In a small bowl, mix soy sauce, garlic and ginger together. Once onions have softened, add sauce mixture to the pan.
4. Immediately add the cabbage to the pan and toss to distribute ingredients together evenly. Add chicken broth, scallions, corn, water chestnuts, bamboo shoots, salt and pepper. Mix together. Cook until cabbage is wilted to desired crunch.

Tasty Tuesday: Naked Chicken & Eggplant Parm

Thank you Hungry Girl for another AWESOME recipe.  The farmer markets are open and veggies are fresh.  What better way to enjoy them then with some protein.  I’m not usually one to run the oven this long in the summer but it is sooooo worth it.

All the things you crave about chicken and eggplant Parmesan, in one big melty dish… Super yum!

Prep: 15 minutes          Cook: 1 hour and 10 minutes          Cool: 10 minutes

1/4th of pan (4″ X 4″): 350 calories, 12g total fat (5.5g sat fat), 814mg sodium, 14.5g carbs, 6g fiber, 7.5g sugars, 45.5g protein — SmartPoints™ value 6*

Ingredients:

1 large eggplant (about 20 oz.), ends removed
Four 5-oz. boneless skinless chicken breast cutlets, pounded to 1/4-inch thickness
1 cup canned crushed tomatoes
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
Seasonings: garlic powder, onion powder, salt, Italian seasoning

Directions:

  • Preheat oven to 400 degrees. Spray 2 baking sheets and an 8″ X 8″ baking pan with nonstick spray.
  • Cut eggplant lengthwise into 1/2-inch slices. Sprinkle with 1/2 tsp. garlic powder, 1/2 tsp. onion powder, and 1/4 tsp. salt, and lay on one of the baking sheets.
  • Lay chicken cutlets on the other baking sheet, and sprinkle with 1/4 tsp. garlic powder, 1/4 tsp. onion powder, and 1/4 tsp. salt.
  • Bake eggplant and chicken for 20 minutes.
  • Meanwhile, to make the sauce, combine these ingredients in a medium bowl: tomatoes, 1 1/2 tsp. Italian seasoning, and 1/2 tsp. each garlic powder and onion powder. Mix well.
  • Remove chicken from oven.
  • Flip eggplant, and bake until lightly browned and mostly softened, about 12 minutes. Remove sheet, but leave oven on.
  • Evenly layer the following ingredients in the baking pan: 1/4th of the sauce, half of the eggplant slices, another 1/4th of the sauce, 1/2 cup mozzarella cheese, 2 tbsp. Parm, and another 1/4th of the sauce. Evenly top with cooked chicken.
  • Continue layering with remaining eggplant slices, sauce, 1/2 cup mozzarella cheese, and 2 tbsp. Parm.
  • Cover pan with foil, and bake for 30 minutes, or until hot and bubbly.
  • Uncover and bake until cheese has completely melted and lightly browned, about 5 minutes.
  • Let cool for 10 minutes before slicing.
