Tasty Tuesday: 30 Minute Chicken Tortilla Soup

This YUMMy recipe is from MoscatoMom. This delicious and filling Chicken Tortilla Soup is ready in just 30 minutes but tastes like it has been cooking all day! Perfect for cold nights this winter!

Prep Time:  5 mins     Cook Time:  20 mins
Servings: 6

Ingredients

1 cup carrot matchsticks
1 small bell pepper diced
1 cup mild salsa
2 Tbsp olive oil
1 Tbsp Better Than Bouillon – Roasted Chicken Flavor
4 cups water
5 corn tortillas cut in to strips
1 package liquid fajita seasoning
1 rotisserie chicken

Instructions

  1. In a large pot begin by sauteeing carrots and bell pepper in olive oil until soft.
  2. Add in salsa, Better Than Bouillon and water and bring to a boil.
  3. Add in liquid fajita seasoning and allow to boil for 10 minutes.
  4. While that boils, cut tortillas into strips and shred chicken.
  5. Add tortillas to soup and stir until tortillas begin to dissolve.
  6. Add in shredded chicken and let cook for 5 minutes.
  7. Serve hot topped with your favorites – sour cream, avocado, and cheese!

Tasty Tuesday – Simple Keto Pizza Chicken Bake

No…. I’m not on the Keto  diet BUT this looked yummy.  I am always curious how these recipes will translate to Weight Watchers’ Smart Point…Thank you Moscato Mom for today’s recipe.
This simple and delicious Keto Pizza Bake will win over your pizza loving family!
Prep Time:  10 mins     Cook Time:  30 mins
Total Time:  40 mins     Servings:
Weight Watchers Smart Points: 4
Ingredients
  • 3 Large boneless skinless chicken breasts
  • 2 tsp. Garlic powder
  • 1 tsp. Basil
  • Salt and pepper to taste
  • 1 tbsp. Olive oil
  • 12 tbsp. Low carb Marinara sauce
  • 1 c. Mozzarella cheese (for WW use part skim cheese)
  • 24 Pepperoni slices

Instructions

  1. Preheat the oven to 400 degrees.
  2. Slice the three chicken breasts in half lengthwise to create 6 pieces of chicken.
  3. Sprinkle 2 teaspoon of garlic powder evenly over both sides of the chicken breasts.
  4. Add ½ teaspoon of basil to each side of the chicken breasts.
  5. Apply salt and pepper to taste to each side of the chicken.
  6. Heat 1 tablespoon of oil in a skillet over medium-high heat. Once the skillet has come to temperature, add the chicken breasts. Sear them for 1-2 minutes on each side without moving, so that they get some good color.
  7. Place the chicken breasts in a single layer in a casserole dish or other baking pan with high sides.
  8. Cover each piece of chicken breast with two tablespoons of a low carb marinara sauce. You can substitute this with any other low carb pasta or pizza sauce of your choosing, just make sure that sugar is not in the ingredients.
  9. Sprinkle 1 cup of mozzarella cheese over top of the chicken breasts.
  10. Top each chicken breast with four slices of pepperoni.
  11. Bake the chicken for 30-40 minutes or until the toppings have browned, and the chicken is cooked through.

This simple and delicious Keto Crustless Quiche will be your new keto breakfast favorite! Perfect for meal prep for breakfast on the go! I love the fact it is gluten free too!!!

Ingredients

9 eggs
2 cups shredded cheddar cheese
1 1/2 cups broccoli florets – steamed and roughly chopped
2/3 cup heavy whipping cream
1 tsp salt
1 tsp pepper

Instructions

  1. In a large bowl, crack eggs and stir briskly.
  2. Slowly pour in heavy whipping cream and mix thoroughly.
  3. Add in cheese, broccoli, and seasonings and stir until well combined.
  4. Pour into greased muffin tin or baking dish.
  5. Bake at 350* until cooked through and top begins to brown – approx 15 minutes in a muffin tin and 45 minutes in a baking dish.
  6. Serve warm or room temperature.

Note* quiche will rise when baking but will settle as it cools. To save, seal tightly in the refrigerator.

Tasty Tuesday: Zucchini Pizza Casserole

I LOVE pizza. I used to create pizza with english muffins, tortillas, pits bread and of course the little frozen ones were always a staple in the house.  When I couldn’t decide what to have for dinner, salad and a mini pizza worked.  THEN I was told to go gluten free, and dairy free.  To say the least, I was not a happy camper.

Frozen gluten free, dairy free pizzas are nasty!  I found if I stuck with gluten free and just a little bit of cheese (real mozzarella) I felt okay.  Then I was hit with the high points for gluten free products which did not mesh well with my Weight Watcher program.  What was a girl to do?

I trust Moscato Mom and love many of her recipes so I am ready to try this one….

She says “This dish is not just amazing the day you make it – but we made enough to take for lunch the next day and I swear it was even better reheated. Now I keep pretty much all of the ingredients on hand for any time that pizza mood strikes… which is often.”

Ingredients

4 cups shredded unpeeled zucchini
1/2 teaspoon salt
2 large eggs
2 cups shredded mozzarella cheese
1 pound ground beef
1/2 cup chopped onion
2 cups Rao’s Low Carb Pizza Sauce

Instructions

  • Preheat oven to 400°. Place the shredded zucchini in a colander, sprinkle with about a tablespoon of salt, and toss.
  • Let sit 10 minutes, then squeeze out moisture by dumping the zucchini into a kitchen towel or clean t-shirt, pulling up the ends and squeezing out all of the moisture.
  • Combine zucchini with eggs in a large bowl.
  • Press the zucchini mixture into two 9x9in pans (or two pie dishes or a 13x9in baking dish).
  • Bake 20 minutes.

  • Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef as you cook it.
  • Drain the fat from the pan and stir in the spaghetti sauce and spoon the mixture over the zucchini crust.
  • Sprinkle with the mozzarella.
  • Bake until heated through, about 20 minutes longer.

Make the Most of a Staycation

As a single mom of a competitive cheerleader, vacations were usually tied to cheering competitions out of state.  Always a lot of fun but not very relaxing.  We were always on the hunt for budget-friendly options.   Today, they are know as “a stay cation” and are often dreaded!   Honestly, we live at the shore, who wants to stay at the shore with all of the “shoobies”.

Check out some awesome ideas for having the best staycation this summer.

Camping

This was not an option for a LONG time when my daughter was little.  She was definitely a hotel and room service kind of girl.  Then she went camping with one of her best friends and her mom.  Despite some hiccups, she had a good time.  Camping memories are some of the best for me growing up.  There are many great sites for camping at a low cost in our area. Some of them even offer it for free! You could even pop up a tent and camp out in your backyard. Camping is a great, cheap way to enjoy the outdoors with your family this summer. Don’t forget to pack the makings for s’mores!

Beach

Pack up the family, the swimming gear and the sunscreen and head to your local beach! Living at the shore, this is not on the tops of my list since everyone else is headed this way.  When we lived in South Jersey, we used to go to the Bay or the Lake.  Most cities around the country have lakes that allow for swimming, fishing, boating and relaxing at the beach. Fill a cooler with lunch and snacks and just spend the day enjoying the water and the sun.

Museums

This was definitely not for us ….If hanging out in the heat is not your favorite thing to do during the summer, you can still have some fun in your local area without spending a ton. Check out your local museums. You can walk around in a nice air conditioned building to beat the heat while having fun learning about history. Admission to most museums is only a few dollars!

Pretend you are a “shoobie”.  Are there some new restaurants in town you haven’t been to yet and would like to try? Are there some local parks you haven’t been to before? Another great staycation idea is to spend the day exploring your town. Go to some parks, take a long walk, try out some new local food, grab some ice cream cones, whatever your heart desires. This will possibly be one of the more pricey staycation options but it is far less expensive and stressful than traveling.

Movies

Another option for beating the heat this summer is to head to the theater! A lot of new movies come out during the summer months so it is a really good time to go. Check your local theater’s websites for coupons to save on tickets and snacks. Another alternative to going to a movie is to attend a live-action play. Check out your local playhouse to see what their current productions are.
