Tasty Tuesday: SWEET POTATO SALAD WITH BACON

As many of you know, it has been recommended I try several different things in an effort to reduce MS symptoms and deal with my gastro issues.  Hubby came across a book by Terry Wahls, MD who has lots of success with this eating plan in reducing and in some cases getting rid of MS symptoms.  I have talked to several who are on this plan, and it works for them.  I am doing most of it anyway, so I figured I would go all the way.  The only change is that I will add some meat back into my diet, eliminate eggs and sugar while I increase fruits and veggies.  Hopefully, this will help with some of the new MS symptoms cropping up.  Thank you and Heather Christo for this yummy recipe.  This is from Wahls Protocol Recipes.

I love potato salad, but mayonnaise is not my friend.  So, this one sounds YUMMY!  The color and crunch from sweet potatoes, celery, and a bit of bacon sounds like the perfect combination. Serve this at your next backyard BBQ and no one will be missing the goopy white old-fashioned potato salad. 

PREP: 15 minutes     COOK TIME: 15 minutes     SERVINGS: 4 TO 6

Ingredients:

  • Kosher salt
  • 3 large sweet potatoes, peeled and cut into chunks

MUSTARD VINAIGRETTE:

  • 1 red Fresno chili, seeded and minced
  • 2 tablespoons whole-grain mustard
  • 2 garlic cloves, minced
  • 1⁄4 cup rice vinegar
  • 1⁄4 cup olive oil
  • Kosher salt
  • 4 uncured bacon slices, cooked until crisp and crumbled
  • 1 cup thinly sliced celery hearts
  • 1 cup thinly sliced green onions

Directions:

  1. Bring a medium-large pot of salted water to a boil. Add the sweet potatoes and simmer until just fork-tender, about 15 minutes. Drain the potatoes and briefly and gently rinse them with cold water. Set aside.
  2. To make the mustard vinaigrette: In a small bowl, whisk together the chili, mustard, garlic, vinegar, and olive oil. Season with salt.
  3. In a large bowl, combine the sweet potatoes, bacon, celery, and green onions and toss with the mustard vinaigrette. Season with salt. Serve warm or at room temperature, or refrigerate and serve chilled.

Saturday Spotlight: HARVEST

Today’s spotlight is on a local restaurant we stumbled upon in our search for a restaurant with grass feed beef for a good burger.  Thank you YELP for your help.  LOL!

HARVEST Local Seasonal Cuisine is a full service restaurant offering both lunch and dinner. Their focus is preparing wholesome food, from local farmers, bakers and provayers while offering gluten free and healthy meals.

From the minute we walked in, we knew we were going to love it!  The wall was filed with chalkboards listing some of their local farm suppliers.  We knew some of the names and I was excited to know gluten free options were available.

Our waitress (unfortunately, I forget her name) was super friendly and helpful.  She chatted about the daily specials and then left us to scour the menu.  It was easy for hubby – he wanted a burger.  I on the other hand wanted to try so many different things I had a hard time deciding.  When our waitress saw me struggling, she came back to try and help. They did not have gluten free bread but she offered an option for the burger of turning it into a salad with fresh kale and spinach.  I jumped at it and I am so glad I did.  Both burgers were cooked to perfection.  The greens were fresh and the plate looked amazing.  Yup, I forgot to take a picture of mine but here is hubby’s

We were early for the usual lunch crowd but the waitress explained reservations are usually needed for both lunch and dinner.  There is limited seating and they get busy.  They are closed on Mondays too.  They offer full service casual dining between the hours of 11am and 9 pm.

Tasty Tuesday: Sweet Potato &Turkey Frittata

As you know we have health struggles in our house and one of our goals is to battle them in a holistic manner.  So we stumbled onto Vani Hari and were immediately hooked.

This can be used for brunch but I actually like it for dinner with a salad or some fresh veggies roasted in the oven.  Sweet potatoes are one of my favorite veggies and they are full of beta carotene – a potent antioxidant for fighting aging – along with lutein which make them fantastic for your eyes and vision. We are blessed to get fresh eggs from a family member so I know they are organic eggs.  I swear they taste better too! Eggs are a good source of protein, omega 3 fatty acids, and vitamin D & B12.

Prep time:  5 mins     Cook time: 20 mins     Total time:  25 mins     WW SmartPoints: 11 Serves: 2-3

Ingredients

2 tablespoons coconut oil, divided
4 ounces ground turkey (vegetarian: use 1 cup chopped kale)
1 sweet potato, peeled and small dice
5 eggs, beaten
1 teaspoon chili powder
¼ teaspoon sea salt, more to taste
⅛ teaspoon ground pepper, more to taste
2 tablespoons chopped parsley

Instructions

  • Heat the oven to 400 degrees.
  • Heat 1 tablespoon of oil in a saute pan over medium heat. Add the turkey and cook until no longer pink. Add the sweet potato and cook until tender, adding water to the pan if needed.
  • Pour the sweet potato mix in an oven safe dish. In a separate bowl, beat the eggs with the chili powder, salt and pepper. Add to the sweet potato mix and place in the oven.
  • Bake for roughly 15-20 minutes or until the eggs are set. To serve, place a slice of the frittata on your plate and top with some chopped parsley. Enjoy!

Cleaning Tips and Tricks

Eco-Cleaning Myths DeBunked

Organic.  Non-Toxic. No GMOs.  Every where you turn, people are trying to avoid the toxic chemicals in their homes.  There are some good old fashioned cleaning tips that have gone by the wayside in this fast paced world.

Here are some of those tried and true cleaning solutions:

1. Cleaning and unclogging pipes.

Pour four teaspoons of baking soda into the sink, then add a cup of vinegar. If fizziness and bubbles arise, rinse it down with hot water and your pipe will be unclogged.  I know this one works because we have used it when we are out of Drano.  Cheaper and always on hand.2. Cleaning pots with tomato sauce

Tomato sauce as a cleaning product … who knew? Stainless steel pots usually have a layer of copper, where copper oxide is formed during cooking. The tomato sauce contains acetic acid, which attacks the copper active base of the pan. Apply a thick layer of sauce on the base of the pan and let it work its magic for 30 minutes. Then wipe it away and watch the black stains disappear right before your eyes.

3. Plants help get rid of dust.

Dust appears everywhere, even after having cleaned it away 10 minutes ago. The good news is that plants can help!  They not only bring life to the living room, BUT they also filter the pollutants from our air and provide us with fresh oxygen. Plants such as ferns and orchids catch the floating dust in the air on their leaves and can be wiped off with a damp cloth.

4. Sparkling water removes stains 

Another stain on your shirt? Quickly grab a bottle with sparkling water or soda and let the carbon dioxide dissolve the colour and tannins from the fabric.  This doesn’t work for fat or oil stains!  To use this method, saturate the spot and blot it up with a dry and absorbent cloth in a circular motion- always dab, never rub.

5. Lemon juice makes your exhaust duct shine 

The exhaust duct in the kitchen is a magnet for odors and oil stains. To remove the sticky spots, cut the lemon in half and rub it all over the metal surface. The acid quickly and efficiently removes fats and oils. For stubborn stains, add a few drops of detergent on a cloth and gently rub the stains away. Avoid the use of stainless steel sponges, as they tend to scratch the hood, making it shine even less than before.

6. Clean silver jewelry and silverware with toothpaste.

Is your silver jewellery starting to look dull? Just like your teeth, it turns out that toothpaste is the perfect solution for silverware. Get your trusty toothpaste (not gel) out of the bathroom and scrub the ornaments with a toothbrush. Rinse the toothpaste off by dipping the silverware into a cup of warm water. The oxidised silver particles will be quickly washed away and your jewellery will start to shine again.
