Tasty Tuesday: Undone Stuffed Pepper Casserole

Thank you Lori Sharkey, an Executive Manager with Pink Zebra, for today’s recipe from the Kraft Kitchens.  Lori’s family loved this dinner option.

Prep Time: 15 minutes     Total Time: 40 minutes   Servings: 7 at 1 cup each

You layer the ingredients of this Undone Stuffed Pepper Casserole to save time and deliver big flavor. Enjoy this stuffed pepper casserole as a weeknight entrée!

Ingredients:

1 lb. lean ground beef
2 green peppers, coarsely chopped
3 cloves garlic, minced
2 cups cooked long-grain white rice
1 jar (24 oz.) OLIVO by CLASSICO Traditional Pasta Sauce
1-1/2 cups KRAFT Shredded Italian* Five Cheese, divided

Directions: 

  1. Heat oven to 350ºF.
  2. Brown meat with peppers and garlic in large skillet; drain. Return meat mixture to skillet; stir in rice, pasta sauce and 3/4 cup cheese.
  3. Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining cheese.
  4. Bake 25 min. or until heated through.

Tasty Tuesday: Breakfast or Dessert?

Nothing beats a hot breakfast. But if, like me, you’re not a morning person, the opportunity for a few more zzzzs usually trumps getting up a little earlier to cook. In my world, “hot breakfast” = toast. Once in a while, though, there’s an occasion special enough for me to make the first meal of the day something more than a quick grab ‘n go. 

ingredients

  • 1 package Absolutely Almond Pound Cake Mix
  • 1 cup water
  • ¾ cup butter, melted
  • 1 (8 ounce) package cream cheese, cut into ½-inch cubes
  • 1 cup fresh blueberries
  • 6 large eggs
  • 2 cups half & half
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Maple syrup, fruit syrup, whipped cream, optional

directions

  1. Preheat oven to 325°F. Prepare Absolutely Almond Pound Cake according to package directions using water and butter. Allow to cool fully and cut into roughly 1-inch cubes.
  2. In a greased 8×8 baking dish, layer ¾ of cake cubes, cream cheese cubes, blueberries and remaining cake cubes.
  3. In large bowl, whisk together eggs, half & half, cinnamon and vanilla; pour mixture evenly over baking dish. Cover with aluminum foil and refrigerate 4 hours or up to overnight.
  4. Preheat oven to 425°F. Remove cover and continue baking 30-35 minutes or until knife inserted in center comes out clean.
  5. Cool 5 minutes; cut into slices and serve with maple or fruit syrup and whipped cream, if desired.

Tips & Hints

  • Prefer a slightly more traditional French toast recipe? Try using Bountiful Beer Bread® cubes instead of pound cake. This Overnight French Toast Bake is a sweet and savory option.
  • Try using Sunny Lemon Pound Cake & Icing Mix to add a light, citrus flavor.
  • Sprinkle toasted almond slices over the top before baking to add a nutty crunch.

Tasty Tuesday – Veggie-Quinoa Teriyaki Stir-Fry

Another YUMMY recipe courtesy of Hungry Girl.  Yes, I LOVE her recipes.  Most are quick and easy and hubby loves them.  This is one ROCKIN’ meat-free meal. So much flavor… so little effort!

Prep: 5 minutes       Cook: 30 minutes   MAKES 4 SERVINGS

1/4th of recipe (about 2 cups): 323 calories, 4g fat, 788mg sodium, 59g carbs, 8.5g fiber, 18.5g sugars, 12.5g protein — PointsPlus® value 8*

Ingredients: 

1 cup uncooked quinoa, rinsed thoroughly
1 tbsp. chopped garlic
6 cups frozen stir-fry veggies
4 cups broccoli florets
1/2 cup all-natural thick teriyaki marinade or sauce (like the kind by Annie Chun’s)

Directions:

In a medium pot, combine quinoa, 1/2 tbsp. garlic, and 2 cups water. Bring to a boil, and then reduce heat to low. Cover and let simmer for 15 minutes, or until water has been absorbed and quinoa is fully cooked. Transfer to a large bowl, and cover to keep warm.

Bring a very large skillet sprayed with nonstick spray to medium heat. Add remaining 1/2 tbsp. garlic, stir-fry veggies, broccoli, and 1/4 cup water. Cover and cook until veggies have mostly softened, 6 – 8 minutes.

Uncover, and cook and stir until excess liquid has evaporated and veggies are fully softened, about 2 minutes.

Add teriyaki sauce and cooked quinoa and mix well. Cook and stir until hot, about 1 minute. Serve up and enjoy!
