Tasty Tuesday: Baked Spaghetti Squash

Thank you Rachel of Wicked Good Spice Mixes Co for today’s recipe.  Perfect timing since I grabbed a spaghetti squash at the farmer’s market.

INGREDIENTS:

DIRECTIONS:

  1. Heat oven to 400 degrees F and arrange a rack in the middle.
  2. Cut squash in half lengthwise and scrape out seeds
  3. Brush flesh with 2 tablespoons of the oil and season generously with sale and freshly ground pepper.
  4. Place squash, cut sides up, on a baking sheet and roast until fork tender – about 50 minutes
  5. Remove squash from the oven and let sit at room temperature until cool enough to handle – about 30 minutes
  6. Scrape flesh with a fork to make long squash strands, set aside
  7. Heat remaining 2 tablespoons olive oil in a large sauce pan, over medium heat until simmering about 3 minutes.  Add garlic and shallot, season with salt and pepper. Cook until softened and lightly brown – about 3 minutes.
  8. Add reserved squash, toss with tongs to coat thoroughly.  Cook until heated through.
  9. Remove from heat, add cheese a handful at a time while tossing squash to evenly coat.
  10. Serve with Tuscan Bistro Blend, freshly ground pepper and extra cheese.

I’m so ready for fall mainly so I can start cooking again.  Summer in our house means eating out and salads which is okay but I do miss cooking……We don’t have a grill at the condo (too many rules) or I would definitely be grilling all summer long.

Tasty Tuesday: Wicked Good Salmon Cakes

Today’s YUMMY recipe is from Rachel at Wicked Good Spice Mixes.  If you haven’t tried any of their products, you are missing out on some AMAZING things.  I am a HUGE fan their spices and love to use their flavored vinegars on my salad in place of dressing.  A little goes a long way…

Ingredients:

Instructions

  1. Drain liquid from canned salmon
  2. Combine all of the ingredients in a medium bowl.
  3. Mix thoroughly.
  4. Shape into 6 large salmon cakes or 10 small cakes.
  5. Place 2 tablespoons of coconut oil into a medium size skillet and heat over medium heat
  6. Place three of the salmon cakes into the skillet  and cook for approximately for 4 minutes or until golden brown.
  7. Flip and cook until other side is golden brown

Serve with Wicked Good Achilles Mediterranean Roasted Veggies.

Tasty Tuesday: Easy Chick Pea Curry

 

Today is another YUMMy recipe from Rachel at Wicked Good Spice Mixes Company.  I love trying new recipes and her seasonings make it even easier.  One bag instead of lots of spices all over the cabinet.

Ingredients:

  • 2 stalks celery (chopped)
  • 2 carrots (chopped)
  • 1 small onion (diced)
  • 2 cans (15 oz each) Chick Peas (with liquid)
  • 1 can diced tomato (with liquid)
  • 2 teaspoons minced garlic
  • 1 tablespoon Jewel in the Crown Garam Masala (Ingredients: cinnamon, ginger, cassia, bay leaf, cloves, chilis, cumin, corriander)
  • 1 teaspoon Pink Himalayan Salt
Directions:
  1. Mix all ingredients into a crockpot.
  2. Cook on high for 4 hours or on low for 6 hours.
  3. Sprinkle with diced cilantro and serve!
  4. Enjoy!
*For added heat, try adding diced jalepenos or dried hot pepper flakes.  You can also add additional Garam Masala right before serving for some added flair!
