Tasty Tuesday: S’mores Icebox Cake Recipe

Thank you Delish for this yummy recipe.  The marshmallow whipped cream is everything.  I am going to try and recreate it with some changes since dairy and gluten are out of my diet…..

PREP TIME:  30 minutes     TOTAL TIME: 6 hours 30 minutes     YIELDS: 6

INGREDIENTS

  • 1 package instant chocolate pudding mix
  • 2 c. cold milk
  • 1 c. heavy cream
  • 2 tbsp. sugar
  • 7 oz. marshmallow crème
  • 1 sleeve graham crackers
  • 1 package mini marshmallows

DIRECTIONS

  1. Line a 9″-x-5″ loaf pan with plastic wrap, allowing overhang on all sides.
  2. In a large bowl, whisk pudding and milk until fully combined. Let cool completely.
  3. Make marshmallow whipped cream: In a large bowl, beat heavy cream and sugar until stiff peaks form. Fold in crème and set aside.
  4. To loaf pan, add 1 layer of graham crackers, breaking crackers up when necessary to completely fill bottom. Spread 1/3 chocolate pudding on top of that, then add an even layer of mini marshmallows (about 1/2 cup). Spread on 1/3 marshmallow whipped cream mixture, then repeat process 2 more times, ending on marshmallow whipped cream. Refrigerate overnight.
  5. When ready to serve, invert cake onto flat serving platter and peel off plastic.
  6. On a baking sheet, add 1/2 cup mini marshmallows. Using a kitchen torch or broiler, toast marshmallows until golden brown. Once cool enough to handle, place on top of cake. Serve immediately

Tasty Tuesday: Bacon Wrapped Pineapple

 

Thank you Wicked Good Spice Mixes for today’s recipe.  Try their pineapple balsamic vinegar to make this easy appetizer.  I love this and the peach vinegar on my salads!

Ingredients:

  • 1 pineapple, cut into bite size pieces
  • 1 lb of thick cut bacon (Look for the nitrite and nitrate free bacon)
  • 1/3 cup of Honey
  • 2 tsp of Wicked Good Spice Mixes Pigs Can Fly
  • 1/4 cup of Wicked Good Spice Mixes Pineapple Balsamic Vinegar

Instruction:

  1. Preheat your oven or grill to 400 degrees
  2. Line a baking sheet with foil for easier cleanup.
  3. Cut up pineapple into bite size pieces and cut each bacon strip in half.
  4. Wrap each piece of pineapple with bacon strip and secure with a tooth pick.
  5. Put honey, Pigs Can fly and Pineapple vinegar in a food processor until blended.
  6. Separate into two bowls. (Put one bowl aside to brush on after bacon wrapped pineapple is cooked.)
  7. Dip a pastry brush in one bowl coat bacon wrapped pineapple.
  8. Bake or grill about 20 minutes until bacon is crispy.
  9. Transfer to a platter and using a clean pastry brush, use reserved bowl of glaze to brush on cooked bacon wrapped pineapple and serve while warm.

Also works well with shrimp or scallops! Yum!

Tasty Tuesday: Peanut Butter Blossoms

Everyone loves these cookies topped with Hershey’s kisses chocolates.  Fun, each and full of peanut butter flavor, they are a must for any holiday baking list.  These have ALWAYS been one of my favorites

PREP TIME : 20  MINUTES

INGREDIENTS

  • 48 HERSHEY’S KISSES Brand Milk Chocolates
  • 1/2 cup shortening
  • 3/4 cup REESE’S Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup additional granulated sugar for rolling

DIRECTIONS:

1. Heat oven to 375°F. Remove wrappers from chocolates.
2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. Makes 48 cookies.

Tasty Tuesday: Chewy Coconut Almond Cookies

I will admit, I haven’t made them YET!  I have never been much of a baker, I always left it up to everyone else.  It was something Belinda liked to do especially during the holidays.  This recipe actually doesn’t seem too hard.  I LOVE almond cookies BUT was never a huge fan of coconut until recently.  The whole gluten free thing got me to try it and I actually liked it!

This recipe is courtesy of the author of “Simply Gluten Free Desserts” Caral Kicinski:

INGREDIENTS

  • 2 1/2 cups almond flour
  • 1 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 1/4 cup plus1 tablespoon coconut oil melted (not hot)
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup dark chocolate chips (optional for drizzling)

INSTRUCTIONS

  1. In a large bowl whisk almond flour, coconut, baking powder, salt, and brown sugar until no lumps remain.
  2. In a separate bowl, vigorously whisk eggs for 1 full minute. Add coconut oil, vanilla extract, and almond extract and stir to combine. Add wet ingredients to the dry ingredients and stir using a wooden spoon or rubber spatula. Stir until thoroughly combined; use your hands if necessary. Tightly cover and place in the back of your fridge (where it’s really cold) for 2 hours or up to overnight.
  3. Preheat oven to 375°F and line two baking sheets with parchment or silicone liners. Roll or scoop the dough into 2 tablespoon portions (about golf ball size) and place them a couple inches apart on the prepared baking sheets. Press down on each ball of dough to flatten (they will spread very little when baking). Bake for about 9 minutes, until the edges are just beginning to turn golden brown. Place the baking sheets on wire racks to cool completely.

OPTIONAL CHOCOLATE DRIZZLE:

  1. Melt chocolate chips in a small saucepan over low heat, stirring frequently. Drizzle the top of the cookies with melted chocolate (I put the melted chocolate in a plastic bag and snipped the corner for easy drizzling). Allow the chocolate to firm up at room temperature or speed it along by placing the cookies in the fridge.

Tasty Tuesday: Apple Pie Fritter Bread

Today’s recipe is courtesy of The Baking Chocola Tess.

Do you like Apple Fritters?  I don’t mean the kind you find in WaWa or any other store bakery.  Have you ever had an apple fritter baked into a fluffy, buttery, white cake loaf with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top?  I mean the moist, delicious and full of home-made goodness from the heart – just like home kind!  I am going to tweak this some so it is gluten free and hopefully it will be just as YUMMY!

Bread Loaf

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup white sugar

1/2 cup butter, softened

2 eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk or almond milk

2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

Old-Fashioned Creme Glaze

1/2 cup of powdered sugar

1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Instructions
  1. Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  2. Mix brown sugar and cinnamon together in a bowl. Set aside.
  3. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
  4. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
  5. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.
  6. Mix milk into batter until smooth.
  7. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.
  8. Lightly pat apple mixture into batter.
  9. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
  10. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
  11. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
  12. To make glaze, mix powdered sugar and milk or cream together until well mixed.
  13. Let cool for about 15 minutes before drizzling with glaze.
