Tasty Tuesday: Simple Keto Broccoli Crustless Quiche

This simple and delicious Keto Crustless Quiche will be your new keto breakfast favorite! Perfect for meal prep for breakfast on the go! I love the fact it is gluten free too!!!

Ingredients

9 eggs
2 cups shredded cheddar cheese
1 1/2 cups broccoli florets – steamed and roughly chopped
2/3 cup heavy whipping cream
1 tsp salt
1 tsp pepper

Instructions

  1. In a large bowl, crack eggs and stir briskly.
  2. Slowly pour in heavy whipping cream and mix thoroughly.
  3. Add in cheese, broccoli, and seasonings and stir until well combined.
  4. Pour into greased muffin tin or baking dish.
  5. Bake at 350* until cooked through and top begins to brown – approx 15 minutes in a muffin tin and 45 minutes in a baking dish.
  6. Serve warm or room temperature.

Note* quiche will rise when baking but will settle as it cools. To save, seal tightly in the refrigerator.

Listen and Be Still

These are the words I needed to hear this morning because I forget to LISTEN and BE STILL.  My mind is always racing 100 miles ahead of where I am – letting moments pass by, letting frustration creep in, and worse of all letting Negative Nellie and Doubtful Debbie land for even a moment.  Patience has never really been a strong point for me.

The last few weeks have been a struggle, I have found myself undergoing a range of emotions or should I say reactions which are not always pleasant.  I can be down right mean sometimes – yes, it happens.

I have asked Hubby to point it out to me when it happens.  Okay, I didn’t say it was the best decision but with brain fog happening more and more – I need someone to help me remember.   Just the other day.  We were having a great morning when all of a sudden – this gray cloud came over me and I was “snappy”.  I know hard to believe, right?  LOL.  I actually found myself stopping for a moment , keeping QUIET and saying the Serenity Prayer.  Within an hour – gray cloud gone and sunshine prevailed for the rest of the day.  I so which I could understand why the gray could comes out of no where.  I don’t know where they come from BUT I do know what makes them go away – listening to and signing my favorite songs, asking God for help instead of demanding help; keeping quiet, appreciating my surroundings and being grateful for all of the many blessings God has given me.

I find myself having one sided conversations with God (or anyone else who will listen) and then when I need to BE STILL, I become impatient because I want an answer NOW!  My time, not God’s time.

So JUST FOR TODAY in a day filled with activity, I will make sure I take a few moments to BE SERENE, BE STILL and LISTEN.  I have a dream and goals but I need to know if they are the same as what God has in store for me.  The only way to know is to LISTEN.  Get off the computer. Avoid the IPAD.  Get away from the phone.  UNPLUG, communicate with people, LISTEN and watch for the doors that God is opening for me.

Will you unplug with me and PLUG into God’s beauty which surrounds us?  What are you thankful for today?

Travel Tips

On the Road Again

make_your_road_trip_an_epic_adventureI’m so ready for spring.  I’m getting the itch for a road trip.  No, I don’t mean taking a flight or train, I mean actually driving and enjoying the beauty around us.  For many of us, you are wondering where the beauty is, right?  The roads are congested with traffic, construction keeps us gridlocked in traffic and frustration creeps in.

I know road-tripping comes with its own unique set of challenges, from staying awake during long stretches of driving to keeping yourself entertained when you’ve run out of things to talk about (or tea to sip) with your friends. I found some tips on how to have an AWESOME road trip.

Tip #1: I tend to get tired when we are driving those endless highways, what about you?  If there is a group of people traveling, the chatty person should always sit in the passenger seat.  They can help keep the driver and the rest of the car entertained.  Remember those games we played with the kids in the car, like ‘I Spy’, what about some adult versions like Would You Rather, and the License Plate game.  Yes, they sound silly, but trust me, after hours of driving and boredom, you’ll be so delirious these become funny.

Tip #2:  Pack as little as possible on the backseat so there is room to stretch out.  Try road tripping with kids using cubes to help stay organized.  When you arrive at a hotel, do things seem to explode out of your luggage? The cubes could help you stay organized.  In addition, bring a little laundry bag to put dirty clothes in so when you get home, you know exactly what needs to be washed.

Tip #3:  Long car rides make me want lots of sugary candy like Starbursts, red licorice, and of course chocolate.  I firmly believe it helps to me stay awake while I’m driving. Don’t burst my bubble!  I keep everything within reach so I am not driving and struggling to reach snacks or drinks.

Tip #4:  Apps are great, Google saves lives and GPS will get you where you want to go. I am still old school and write down directions and an itinerary ahead of time.  I also figure out an approximate budget so I can stay on track.

Tip #5: The best part of a road trip is trying new foods and sampling the best each destination has to offer. I take recommendations from friends and family.  I also like to check in with employees at the hotel for their favorite local non-tourist place.

Tip #6: Get off the big highways and interstates. Take a chance and drive down a random little road! That’s the advantage of a road trip: Getting lost is the best thing you can do, because it will help you discover something new. You’ll likely be incredibly be surprised by what you find—or who you’ll meet!  I remember taking Sunday road trips with my parents and we always had so much fun.

Rest and Recharge

YEAH for Sunday.  Growing up, Sundays were a day for church, family and family dinners  No, I am not going to preach to you or get religious.  What I am going to talk about is the importance of taking time to rest, re-charge and reward yourself.


For some people Sundays still mean a day of church and family because this is the way that they recharge their battery for the upcoming week.  For many years, Sunday was just another day to me.  In today’s world where most business is done 7 days a week, I too had to work sometimes on Sunday.  When I worked in the non-profit world, Sundays were spent traveling to one of my daughter’s many sporting events.  Okay, still family time but often very little time to recharge my battery.  How do you spend your Sundays?  Do you have off from your 9 – 5 job but try to cram all of the errands/ chores into that one day?  Do you work a second job to make ends meet so there is never really down time? Are you the “taxi” driver for the kids on the weekend?  Are you a workaholic so there is never really any down time from work?

Whatever you are doing – STOP and REWARD yourself with some me time.  As women, by nature, we take care of everyone else putting ourselves on the bottom of the list.  There never seems to be enough time to get your nails done, read a book, take a relaxing bath – whatever your “guilty” pleasure is.  I say that because most of the time when we do take time for ourselves, we feel guilty about leaving the kids/ hubby and as a result, we don’t relax or re-charge.  

I know you are thinking – no time, no money, no one to watch the kids and the list goes on.  Your reward doesn’t have to be anything expensive or lavish or even last for hours.  Your reward could be – A walk in the park or along the beach (my favorite spot); a half hour reading your favorite book, time in the morning (before everyone is up) to read or do devotions; working in your garden, a trip to get your nails done; a soak in the tub with the earbuds on so no one can disturb you.  It can be whatever will pamper YOU and help YOU feel refreshed to conquer the challenges in your life and the upcoming week.  Plan it, put it on the calendar if you have to schedule it – DO IT!  I hope I get this saying right “For when momma isn’t happy – NO ONE is happy”.  

Don’t you deserve a little me time?  Sunday, a day of rest, so what will you do to pamper yourself today?  As for me, I may be working in the morning but when I am done – I will be taking a walk and enjoying the day!  CELEBRATE – ENCOURAGE – REWARD yourself, you deserve it!
