Tasty Tuesday: Egg Roll in a Bowl

This YUMMY recipe is from Weight Watchers.

Prep Time: 10     Cooking Time: 20     SmartPoints™ value: 1     Servings: 8

Ingredients

1 pound(s) cooked 99% fat-free ground turkey breast
1 pound(s) packaged coleslaw mix (shredded cabbage and carrots)
½ medium uncooked onion(s), thinly sliced
1 Tbsp sesame oil
¼ cup(s) soy sauce
2 medium clove(s) garlic clove(s), minced
1 tsp ground ginger
2 Tbsp fat free chicken broth
1 pinch table salt, to taste
1 pinch black pepper, to taste
2 medium uncooked scallion(s), sliced
8 oz canned bamboo shoots, 1 can sliced bamboo shoots
8 oz canned water chestnut(s), 1 can sliced water chestnuts
14 oz baby corn ears, canned, cut each in halves or thirds

Instructions

1. Brown turkey over medium heat.
2. Add sesame oil and onion to pan with turkey. Mix together and continue cooking over medium heat.
3. In a small bowl, mix soy sauce, garlic and ginger together. Once onions have softened, add sauce mixture to the pan.
4. Immediately add the cabbage to the pan and toss to distribute ingredients together evenly. Add chicken broth, scallions, corn, water chestnuts, bamboo shoots, salt and pepper. Mix together. Cook until cabbage is wilted to desired crunch.

Tasty Tuesday: Butternut Squash and Turkey Chili

I love CHILI and I am excited to have a new recipe which has lots of the zero point foods from Weight Watchers.  This is a delicious, filling chili. You can serve it topped with sour cream (or cheddar cheese) and tortilla chips!

Prep Time: 20 minutes     Cook Time:  30 minutes    Serves: 12

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey breast
  • 1 pound butternut squash – peeled, seeded and cut into 1-inch dice
  • 1/2 cup chicken broth
  • 1 (4.5 ounce) can chopped green chilies
  • 2 (14.5 ounce) cans petite diced tomatoes
  • 1 (15 ounce) can kidney beans with liquid
  • 1 (15.5 ounce) can white hominy, drained
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic salt

Directions:

  • Heat the olive oil in a large pot over medium heat.
  • Stir in the onion and garlic; cook and stir for 3 minutes, then add the turkey, and stir until crumbly and no longer pink.
  • Add the butternut squash, chicken broth, green chilies, tomatoes, kidney beans, hominy, and tomato sauce; season with chili powder, cumin, and garlic salt.
  • Bring to a simmer, then reduce heat to medium-low, cover, and simmer until the squash is tender, about 20 minutes.

Tasty Tuesday: Key Lime Pie Parfaits

I am transforming (or at least trying to) my eating into a more healthy lifestyle.  Less processed foods and more of making my own goodies.  I have to be honest, I struggle with some recipes.  The secret ingredient in this recipe is avocado.  Now, I know they are good for me BUT I just don’t care for them.  But, I am willing to give it a try…

This recipe is from Food Babe who is all about healthy clean eating.  So, if you want to shake things up in the morning, this creamy parfait is tart, but full of fiber and nutrients to keep you satisfied all morning long.

Avocados are packed with healthy fats shown to protect the heart and are also a good source of fiber and fat-soluble nutrients such as Vitamin E.

Let’s get started, you’ll need a blender and a few simple ingredients…

Prep time:  10 mins     Total time: 10 mins     Serves: 3      Weight Watcher Smartpoints: 7

Ingredients

1 large avocado, peeled and pitted
¼ cup culinary coconut milk, more as needed
1 lime, juiced and zested
2 1/2 tablespoons raw honey
pinch sea salt

Optional: 1 cup granola of choice (add these points)

Instructions

Place all of the ingredients in a blender except the granola and blend until smooth.
To serve, place ¼ cup granola in a cup and top with ¼ cup key lime pie mousse. Repeat the granola and mousse layers once more. Enjoy!

Fight Hunger – Help A Child

People start businesses for many different reasons.  Many will say it is to make money or to have a flexible schedule.  While others have a passion that isn’t tied to money.  I know that may sound crazy BUT the truth is my motivation in my business goes far deeper than being able to pay bills.

My passion has always been to make a difference in the lives of others.. my business is no different.

My purpose statement is Bringing a smile to face of a child who is hurting because of no fault of their own ensuring that for even a moment they know that someone cares.

Many of you have been a part of my “giving back” programs.  Chemo comfort bags, USA HERO zipper pouches for our Vets.  We have raised money for Smiles for Trevor and Relay for Life, Suicide Awareness and have helped families with medical expenses.  Each of you are helping me to make a difference in the lives women and children so that they know that someone cares!

You have heard about the “Back to School” campaigns that provide kids with backpacks and school supplies, right? These programs help each child start off the school year on the right foot.

Last year, we provide 31 children with THERMAL LUNCH TOTES filled with some healthy snacks.  Let’s be honest, the FREE lunch program doesn’t always have kid friendly foods. No hate mail PLEASE because I know that there are some places that have great meals but let’s be honest, not all of them do.

We will be doing this AGAIN this year.  For $20, you can sponsor a thermal tote filled with healthy snacks for a child in need. If you want to help BUT you don’t have $20, donate what you can – $1, $2, $5, or $10. Maybe finances are tight BUT you know a business that may want to help, GREAT! Let me know or forward this information to them. I will supply a list of business sponsors in every thermal tote along with blogging about them – FREE advertising for helping out a great cause. Where else could they get FREE advertising for $20 or $40?
